Campfire Cinnamon Baked Apples

Description

The easiest snack or dessert ever! These delicious baked apples are such a treat and cook quickly in the glowing embers and coals of a campfire or fire pit


Ingredients

  • 4 large cooking (green) apples, e.g. Bramleys or windfalls
  • 4 tbsp butter, softened
  • 4 tsp soft brown sugar
  • 2 tsp ground cinnamon
  • 2 tbsp raisins

Instructions

  • Using an apple corer, remove the core of each apple. If you don’t have one, use a sharp knife, working inwards from both ends and taking care not to split the apples.
  • Blend 2 tablespoons of the butter with the sugar, cinnamon and raisins. Pack it into the centre of each apple and smear the remaining butter over the top.
  • Wrap each stuffed apple in a double layer of kitchen foil, bringing it up into the centre at the top and twisting the ends to form a handle. This will make it easier to lift the apples out of the fire.
  • Place them upright in the hot embers of the fire, directly on the coals, and cook for 10–18 minutes until cooked, fluffy and tender. Unwrap and enjoy!

Variations

  • Add some chopped walnuts or dried cranberries, or even some porridge oats.
  • If you don’t have cooking apples, use large Granny Smiths, which keep their shape better than other dessert apples.
  • Serve drizzled with honey, maple syrup, cream or yoghurt.

Notes

To stop the filling coming out, leave the bases intact when you core the apples.
